This beautiful fish is without a doubt the most highly sought after of the snappers in this area due to its edibility, sheer size, awesome strength and ferocity. There is an Atlantic version of this same fish although it is said that they do not sport the same ferocious attitude and aren't nearly as palatable.

Description: Sea bass or grouper like body with a rounded snout. Body relatively elongated and slender. Canine teeth are the largest of all the local snappers and as such this fish is referred to sometimes as "Dog" or "Dogtooth" snapper. The overall color of this fish is usually pinkish to light red on the under side with grayish to copper colored sides and back. Fins are rounded and pinkish brown to dark gray in color. The current IGFA All-Tackle record is 78 pounds, 12 ounces, although I've certainly seen them much larger, perhaps over 100 pounds. An average fish would be 10-20 pounds, with a large one being 50 pounds.

Fishing Techniques: By Boat: Live bait such as caballitos or mackerel around rocky points; trolling Rapalas and similar type lures along rocky shorelines; jigging or yo-yoing irons or candy bar type lures around pinnacles; and casting top water lures and swim baits around rocks. Surf Fishing: Caught with bait and lures. Cast top water lures such as Klassic poppers, Rangers etc. around rocky structures and towards passing schools in the late afternoon. Use cut bait on a basic one hook bottom rig with 3 or 4 ounces of weight (pyramid sinker) along sandy beaches during the late afternoon and evening. Fly Fishing: Best done while chumming fish to the surface using cut bait or sardines. The snapper will hit just about any streamer and even top water poppers.

Edibility & Cleaning: Although all snappers are excellent eating, this is my personal favorite. As fish are usually large normal filleting is the preferred method. Remove the skin from the fillets after the flesh has been removed from the fish.
