Karen's Ceviche

Serves 4 |

3/4 lb. firm white fish, bite size
|
1/4 cup yellow pepper, diced |
|
In a glass bowl, marinate the fish and scallops in the lime and orange juices for 30-45 minutes. Drain the liquid from the bowl and gently mix in all the ingredients except the lime wedges. Refrigerate the ceviche 30 to 45 minutes. Spoon into parfait glasses, margarita glasses or glass bowls to show off it's colors. Garnish with lime wedges and serve. |
