Cabo Snook/Robalo

Serves 4

 

1 green pepper, sliced thinly
4 cloves garlic, chopped
1 tablespoon lemon juice
4 - 3oz. fish filets, boneless

Cabo Snook

1 onion, chopped
1 large tomato, chopped thinly
1 teaspoon olive oil

Heat olive oil in frying pan. Add green pepper, onion and garlic and cook until soft. Just before done, add tomatoes. Once tomatoes are cooked, spread to side of pan and add fish filets.

Add 1 Tablespoon lemon juice. Simmer on both sides until fish is done in the middle. Serve filets on a plate, cover with garlic, onion, tomato, pepper mixture.
